BBQ Chicken with Cumin
5 chicken breast
1 tablespoon cumin
1 teaspoon black pepper
2 cups of BBQ Sauce (your choice)
1 teaspoon of garlic powder
1 tablespoon Cayenne pepper
1-2 large sweet potatoes
1 large red pepper
1/2 cup of oil
Directions
1. In a bowl mix the cumin, 1/2 the teaspoon of black pepper, garlic powder, cayenne pepper
2. Peel and slice the sweet potato into slices or sticks about 1/2 inch thick
3. Cut the red pepper into 1/2 inch sticks
4. In a separate bowl put the chicken breast and pour about 1/4 of the cup of oil. Coat the chicken so its covered in oil. Pour in the dry ingredients and coat the chicken.
5. In a frying pan pour desired amount of oil and add the sliced pepper…Season it with the remainder of black pepper.
6. On a baking sheet lined with parchment paper put your sliced sweet potatoes and with a baking brush coat them with the oil
7. On another backing tray lined with parchment paper put out your chicken.
Bake at 350
I usually put in the potatoes for about 30 min before I put in the chicken. I bake the sweet potatoes on the middle rack for the first 30 min before I move them to the lower rack and put the chicken on the middle rack.
Bake the chicken for about 90 minute..The last 10 minutes remove the chicken and glaze it with the BBQ sauce

Stuffed Chicken Breast With Mushroom and Mozzarella
4-5 chicken breast
5 mushroom (white or brown)
1 cup of brown sugar
1 teaspoon of black pepper
1-2 tablespoon of chilli powder (depends on your preference)
1 tablespoon cayenne pepper
1 teaspoon garlic powder
4-5 slices of mozzarella cheese
1/4 cup of oil
Directions
1. Butterfly your chicken breast to create pockets
2. In a bowl mix the brown sugar, black pepper, chili powder, cayenne pepper, garlic powder together.
3. Pour the 1.4 of oil and mix the dry ingredients together
4. Slice up your mushrooms
5. Stuff the chicken pocket with mushroom and a slice of cheese the close it.
6. Dip the stuffed chicken in the spice and oil mix
7. Place the dipped chicken onto a parchment paper lined baking sheet. Once all the chicken has been dipped you can pour the leftover spice and oil mixture onto the chicken
Turn oven on to 350
Bake for 60 min


5 cups Coconut; shredded (sweet or non sweet, your choice)
2/3 cup Flour
1 14-oz can Sweetened condensed milk
1 ea Egg white
1/4 teaspoon Salt
1 teaspoon Vanilla extract
Mix the coconut and flour in a large bowl. Add in salt, then condensed milk. Fluff egg white and then add into mixture. Mix throughly. Drop teaspoon full onto a cookie sheet. Bake for 8-10 minutes at 350 degrees until tops are golden brown. Remove from cookie sheet immediately and allow to cool on a wire rack.


Chocolate Marshmallow Croissants
Makes 8
Ingredients
1 container croissant rolls (I use Pillsbury Crescents)
1/2 cup mini chocolate chips or butterscotch chips (In my photo I used both types)
8-16 large marshmallows (your choice on how full you want it)
Directions
Heat oven to 350°F.
Separate dough into 8 triangles.
Place tablespoon of chocolate chips on wide end of each triangle. On top of chocolate place 2 large marshmallows
Roll up, starting at shortest side of triangle
If you have any holes seal them up by stretching the dough lightly
The marshmallows will make the rolls expand in the oven
Bake at 350°F. for 10 to 12 minutes or until golden brown.
