Banana Chocolate Chip Muffin
Makes 12 Muffins

3 large Bananas
1/2 cup Sugar
1 large Egg
1/3 cup of brown sugar
1 teaspoon Baking soda
1 teaspoon Baking Powder
1/2 teaspoon Salt
3/4 cup All purpose flour
1/3 cup Butter; melted
1 cup of chocolate chips

Preheat oven to 375F / 190C

Directions:

Mash  up your bananas. Add sugar and lightly beaten egg and mix it together well. Add the melted butter. Now add the dry ingredients except the brown sugar. Pour the mix into muffin tin lined with paper muffin cups. Sprinkle the brown sugar over the top of the mixture before putting it into the oven. Bake for 20-25 min.

I’ve been working on multiple things including edits on books I have gotten my right’s back to and something new. This is still without a name but I can tell you it’s a paranormal erotic romance set in the future. I’m posting just a few lines.

Rosemary Baked Potatoes

Ingredients

6 Potatoes medium to large size
2 tablespoon rosemary
3 tablespoon oil
1 tablespoon salt
1 tablespoon black pepper

Directions

Cut potatoe almost all the way to the end so you can fan out the slices
Coat the outside with oil then place on a sheet of aluminum foil
Fanning out the slices insert desired amount of butter in between each slice
Sprinkle with black pepper, salt and rosemary.
While you sprinkle the rosemarry crush it in between your fingers to make it finer
Wrap each potatoe in the aluminum foil and place on baking tray
Bake in oven for 60 minutes at 350

My Adventures In #Cooking- Chicken Fajitas

Chicken Fajitas

Ingredients
8 large tortilas
3-4 skinless boneless chicken breast
1 lime cut into wedges
1 tablespoon of hot sauce
3 teaspoons of chili powder
1 teaspoon of ground cumin
1 green peper
salsa (amount as desired)
1/2 cup of sour cream
1 teaspoon of salt
1/2 teaspoon of garlic powder
1 large onion thinly sliced
1 yellow pepper
1 red pepper
2 tablespoons of oil

Directions

Wrap the tortilas in tin foil and heat them up in the oven for about 10-15 min so that they warm up at 350

Cut up your chicken into strips and toss into a bowl
Pour your hot sause over the chicken and add in the chili powder, gound cumin and salt. Mix it all up so the chicken is evenly coated in the mixture.

In a frying pan pour in 1 tablespoon of oil and toss in the onion and peppers and fry up on medioum heat

In a second pan pour in the other table spoon of oil and over medium heat cook the chicken for about 10 minutes. Make sure to stir it frequently so it does not burn.

After all is cooked mix veggies with the chicken and serve with salsa and sour cream on the side. The lime can be used for garnish.

Side note: I used both chicken breast and chicken I had left over from making chicken soup. Both work very well.

My Adventures In #Cooking- Italian Sausage and Bruschetta

Ingredients

6 Italian Sausages (Hot/Med/Mild, your choice)
3 Green/Red/Yellow Peppers (Color of your choice)
1 tbsp oil
1 tsp garlic powder
1-2 large tomatoes
1 dash of salt
1-2 tbsp of oilive oil
2 large cloves of garlic minced
1 dash of black pepper
1/2 of a diced onion
3 tablespoons of parmesan cheese
1 baguette
1 tsp balsamic vineger
6 leaves of basil

Directions
Slice up the pepper in lon strips and place into a bowl
Pour half the tablespoon of oil into the bown
Add in the garlic powder
Mix everything together

Use remainder of the oil to brush over parchment paper so sausage does not stick. Arrange the sausages on the tray and put the pepper around the sausage.
Bake ar 350 for about 30 minutes

Now for the bruschetta

Dice up the large tomatoes and put into a bowl
Add the minced garlic, finely diced onion, dash of black pepper and chopped up basil leaves.
Add the teaspoon of balsamic vineger and mix everything together

Take your baguette and slice it 1 inch thick.
Brush the baguetter slices with olive oil and place them on a baking tray oil side down
Bake the break at 350 for about 305 minutes (or desired toast color)
After you take out your baguette spoon on the tomatoe mixture and sprnkle on the parmesan cheese and enjoy.

Side note: I had no fresh basil at home so I did not put it into the bruschetta as you might have noticed in the picture above.

So I know a lot of authors have a genre that they stick to when it comes to writing but lately I have found myself taking on new genres that I have not done before. I don’t know if it is due to the fact that there is a lot going on in my personal life which has made me struggle with focusing on work or some other reason.

I have tried to continue working on my books but can’t get my mind space right. I find myself started different genre books and being inspired by weird things. I don’t mind that I work on new things it’s just that I wish I could finish other projects first.

Who knows, maybe in the long run this will result in something good.

Brown Sugar Chilie Bacon Chicken Breast

Ingredients

1 package of sliced bacon
4-5 chicken breasts boneless and skinless
2/3 cup of brown sugar
2 tablespoons of chili powder
Toothpicks
3 cups of water
1 med size bowl
1 tablespoon of oil

Directions

Before you begin pour the 3 cups of water into the bow and dump in the toothpics. Make sure they are fully under water and if need be press them down with a heavy object so they stay submerged. Let them be soaking for at least an hr. This prevents them from burning in the oven.

Cut chicken breast into 1 inch size cubes/slices
Cut the bacon in half ot thirds (your preference on how much you like your bacon)
Wrap each chicken cube/slice with the bacon
Secure the bacon wrapped chicken with the pick
Mix the brown sugar with the chili powder
Coat the bacon wrapped chicken in the mixture
Coat a backing wrack/tray with the oil and placethe coated chicken on top.
Bake at 350 degrees for about 30-30 minutes or until chicken and bacon are cooked

My Adventures In Cooking- Romantic French Toast

Romantic French ToastRomantic French Toast

Ingredients

2 eggs
1 teaspoon of sugar
1/2 cup of milk
1  pinch of salt
6-8 pcs of toast bread (white of whole wheat, preference is yours)1 tablespoon of butter
1-2 banana
10 strawberries ( you can have more if you wish)
Powdered sugar
Maple syrup
1 heart shaped cookie cutter

Directions

If you have a cookie cutter cut out heart from the slice of bread. If cutter is small you can manage to do 2 small hearts/ If you are doing it by hand cut out heart size to your desired shape.

In a bowl beat in both eggs and add the salt, sugar and milk while continue to blending it

Over low to medium heat on your stove heat up a frying skillet and melt the butter.

Take your cut out hearts and dip them into the egg/milk mixture  on both sides and place them into pan to fry.

Fry till the hearts are a golden to light brown color and then remove and place on a plate.

Cut up the banana and strawberies and arrange them nicely around the hearts.

Sprinkle some powdered sugar over the top and drizzle some maple syrup if desired.

Side note. I used kiwi instead since I did not have any banana. As for the egg inside the toast. All I did was take one of the toast slices where I had cut out the heart fried it in the pan and cracked a whole egg into the cut out heart shape.

My Adventures In Cooking- Rosemary Pork Sandwich

Pork Sandwich

Rosemary Pork Sandwiches

1 -2lbs Pork shoulder
1/2 cup of oil
4 cloves of garlic
1 tablespoons of crushed rosemary
2 teaspoon of black pepper
1 green or yellow or red pepper (you choose the color as you prefer)
1 red onion
1/2 cup of grated parmesan cheese
baguette or buns of your desired choice

Directions

Cut up pork shoulder into strips about 1 inch in length.
Put them into a bowl where you can later mix it with the ingredients
Chop up the garlic as fine as possible and put it into the bowl
Take the rosemary and add it into the bowl
Add 1 teaspoon of black pepper into the bowl
Pour 1/2 of the 1/2 cup of oil and leave the other half for the onions and peppers
Mix it together in the bowl
Fry up on medioum heat
If you choose to do it in the oven cook at 350 for about 40-60 minutes

Cut up your pepper into slices. Thicknes is your choice.
I usually do half a green and half a red pepper for more color.
Slice your onion up so you are let with onion rings. Thickness is your choce but I recommend about 1 mm width.
Add 1/2 of the teaspoon of black pepper into the bowl with the pepper.

Toss the onion into a bown and sprinkle the remaining black pepper
Pour a bit of oil and mix it to coat the onion

If you are not picky Mix the onion and peppers into one bowl and cook them on medium in the frying pan.

After everything is cooked cut up your breat and fill it with meat then veggies and top it off with cheese. I spread some mayo over the bun for extra taste before putting in the filling.
